Crock Pot - Cross Rib Roast & Potatoes

Ingredients:

  • Cross Rib Beef Roast
  • 1 Box Beef Stock
  • 1 Tbsp. Beef Bullion
  • 1 White Onion
  • 1 Bag Baby Carrots
  • 1 Bag Potatoes
  • Salt, Pepper, Garlic Salt
  • Olive Oil
  • Flour

 


Prepare the crockpot on the counter, plug in and set on high. Pour one box of Beef Stock and 1 Tbsp. Beef Bullion into the pot. Take a large sauté pan and drizzle a few Tbsp. Olive Oil on high heat. Rinse the roast and place in the pan. Drizzle with olive oil and sprinkle with flour, salt, pepper & garlic salt. Sear on each side and repeat the seasonings and flour. You should have a nice golden brown edge on all sides. Place the roast into the crock pot on high for the next 4 hours. I start mine around 11am. Approximately 4 hours later add the potatoes, carrots and onion. Rinse and quarter or halve the potatoes, rinse the carrots and quarter the onion. Add to the crock pot on high for another approximate 4 hours. The roast should be tender and falling apart after the allotted time. At about 7 p.m. my roast is generally done. Scoop out a little of each and serve!
